Very Easy Apple Cake


Very Easy Apple Cake
Ingredients:
220g flour
220g sugar
1 tbsp baking powder
1 tsp salt
1/4 cup milk
6 tbsp melted butter
3 eggs
1 tbsp cinnamon

6-8 apples, diced
1 lemon, juiced
1 tbsp cinnamon

sugar, sprinkled on top

Steps:
1. Preheat oven to 350F. Line baking sheets with parchment paper.
2. Beat butter, sugar till combined. Stir in eggs till combined.
3. Mix the diced apples, lemon juice and cinnamon till combined and set aside.
4. Mix all dry mixture together, and pour into the wet mixture along with the milk.
5. Then, mix in the apple mixture.
6. Pour into the baking sheets and topped with more sugar to create crunchy texture on top.
7. Bake for 50-60 minutes or toothpick inserted comes out clean. The baking time depends on your oven. It might take longer time since it is a very thick cake base.
8. Cool completely before sliced it. Enjoy!

Two-Layers Ice Cream Cake w. Fondant Topper




This is one of my favorite that I have made! It really consumed plenty of waiting time, and also making it took up plenty of time, especially making the fondant topper. It dried up super fast since I made it during winter time. >.<. This cake consists of 2 layers of HOMEMADE ice cream, and the third layer happened to be the frosting. The first layer is made of coffee Oreo cookies ice cream, the second layer then topped with vanilla nut ice cream. After the ice cream has firmed up, I whipped up a batch of whipping cream and covered up the cake with it. Then, I returned the cake into the freezer to firm up more, around 30 minutes. In the mean time, I started to roll out some fondants. I used white fondant, and colored the white fondant into desired colors needed for the blue, red, and yellow. After assembled the fondant, I sprinkled the rest of the cake with green and red sprinkles to made it looked like a football field. =P. Not perfect, but I am satisfied. Hope you all like it too! The coffee Oreo ice cream is my favorite of the two flavors!

Coffee Oreo Ice cream:
Ingredients:
2 cup heavy whipping cream
1 can condensed milk
2-3 tbsp coffee powder
5 tbsp hot water
10 crushed Oreo cookies

Steps:
Whipped up the cream till firm peaks formed. Then add in the chilled condensed milk, and continued whipping until firm peaks formed again. Dissolve coffee powder into hot water, and set aside for few minutes for it to return to room temperature, or place it into fridge to cool faster. Then, add the coffee mixture and crushed Oreo into the whipped up ice cream base, and mix. Put back into freezer for at least 2 hours to firm up little, or eat it before chilling will give a texture of soft serve ice cream.

No-Bake BIG Truffles Cake


I realized I did not take good pictures for this birthday cake due to the lack of time at that time. It was all a rush (blame myself, I did not timed myself in making this cake very well, mistakes learned). It was a very luscious, creamy and satisfying cake. It does not have any cake form inside it. The concept is a very BIG "Truffles" Cake. Everyone was very happy, I hoped! My sister said it was the best "cake" that I have made. LOL. The base of the cake is made of butter and crushed kitkat (Yes,KitKat! Very Yummy!). Then, the filling is composed of cream, sugar and chocolate for the "cake base", and waited it to firm up very well. Then I dusted with cocoa powder and powdered sugar, and topped with fresh raspberries coated with some syrup. Then, I decorated with chocolate-filled pocky around it. Finish it with a ribbon to hold everything together (Heavy!).

This is a very dense cake, but satisfying. It tasted just like eating a very BIG Truffles Cake. PLUS, no oven needed! Win-Win situation. =D
Before it was dusted with cocoa powder.

Tiramisu Charlotte

*It really has been long enough since I have set foot in my blog. I just have too much on my mind thus the delay. Everything will return to normal, hopefully after June. I have not been baking very often these few months, some adjustments needed to be made beforehand. However, I have found some long due baking photos that are not posted yet. So, here there are. =P


This is a birthday cake that I have made for my friend's birthday (I think it was last year..oops!). It is a Tiramisu Charlotte. The cake base was made of ladyfingers, cream, coffee, chocolate, and mascarpone cheese. Then it was decorated with ladyfingers around the cake, and topped with shredded chocolates, powdered sugar, and a chocolate "Happy Birthday" piece. The ribbon existed to maintain the balance of the cake. It was indeed very heavy! LOL.
