Milo Chiffon Cupcakes


Milo Chiffon Cupcake! I called it a chiffon cupcake because I never expect it to be so fluffy and moist. I thought it would be more of a dense cupcake. However, very happy with the results. So here is the recipe:

Milo Chiffon Cupcakes
Ingredients:
100g butter
80g sugar
2 eggs
100g water
150g cake flour
110g milo powder
2 tbsp baking powder

Steps:
1. Preheat oven to 350F.
2. Beat the butter and sugar till fluffy. Add in eggs one at a time till fully incorporated.
3. Stir in dry mixture and water alternately till mix.
4. Bake in oven for 20-25 minutes. Cool on wire rack.



I decorate one of the cupcake with icing sugar and chocolate sprinkles, just for cuteness! >.<

Spongy Fruit-Filled Cake


I made a simple fruit cake filled with grapes and topped with chocolate sprinkles. Love the spongy texture of the cake.

Spongy Fruit Filled Cake
Ingredients: (I use loaf pan)
2 eggs
60g sugar
60g cake flour
20g vegetable oil

heavy whipping cream
sugar
grapes (cut into half)
chocolate sprinkles

Steps:
1. Preheat oven to 350F. Grease and line loaf pan with parchment paper.
2. Use a hand mixer to beat the eggs and sugar at high speed till ribbon stage.
3. Use a whisk to mix the cake flour and the oil till fully combine. Do it gently.
4. Pour into the pan and bake for 20-25 minutes till toothpick inserted comes out clean.
5. Inverted the pan to cool completely.

Assemble:
Cut the loaf cake into half horizontally. Beat heavy whipping cream with sugar till firm peak forms. Apply the cream on the cake, and put the cut grapes on top, and apply cream on top again.
Then, put another layer of the cake on top, and apply the remaining cream. Put into fridge to set.

Even out the top of the cream on the cake. Cut the four sides of the cake into even and clean sides. (You can eat the scraps, don't waste them, they are yummy!) Decorate in any styles you want, I put chocolate sprinkles because I do not have much ingredients. Yummy!

Nutella Sponge Cake w/ Chocolate Sprinkles


Nutella Sponge Cake w/ Chocolate Sprinkles
Ingredients:
2 eggs, separated
40g sugar
80g vegetable oil
30g milk
100g cake flour
1 tbsp baking powder

1 tbsp cream of tartar
40g sugar

Nutella
Chocolate Sprinkles
butter

Steps:
1. Preheat oven to 350F.
2. Beat egg yolks, sugar, oil till fully mixed.
3. Alternately mix milk and flour mixture into mixture till combined. Set aside.
4. In another bowl, beat egg whites, cream of tartar and sugar till form stiff peaks.
5. Mix with egg yolk mixture and egg white mixture till fully combined.
6. Pour batter into a rectangular pan lined with parchment paper and bake for 25-30 minutes or a springy touch on surface when touch.
7. Cool in pan for 10 minutes, and take it out to be cooled completely.
8. Cut the cake into three sections, and apply nutella onto each layer and all the outer layers, then sprinkle chocolate sprinkles. Let it cool in fridge to set.
