Easy Rainbow Muffin

A Rainbow Cake that is very easy! I am using a french vanilla box cake mix since I have one that I bought long time ago (it is too cheap to not buy >.<). How to make it more appetizing and lovely? Add in Colors! I have never attempted any rainbow cake before, so I am thinking of giving it a try.

Ingredients & Steps:
1 vanilla cake mix (you can use any cake recipe you like, preferable white cake or yellow cake, not chocolate cake; follow the instructions on the box cake mix)
Prepare 4 colors (I only have 4 colors, I guess I cannot call it a rainbow cake then)
Divide the cake mixture into 4 bowls evenly, mix in the colors. Alternately put different colors of batter into a cupcake or muffin tins. Mine came out more like muffins. I bake it at 350 F for 20-25 minutes. Cool completely. It came out very moist and fluffy.

Look at the lovely vibrant colors! =D

"Very-Berry" Homemade Blueberry Jam Muffin

A Very Berry Homemade Blueberry Jam Muffin that I have created. Love the "jam-ness" inside. Super much JAM! Haha.. I just want to finished the blueberry jam that I  have made.Forgive me that all these posts were not current baking projects. I'm trying to catch up to my blogging now. Be patient with me ya, I appreciate it! =D

Ingredients:
1 egg
60g vegetable oil
60g sugar
100g blueberry jam
1 tbsp baking powder
130g all-purpose flour
50g milk

Steps:
1. Preheat oven to 350 F.
2. Beat egg, sugar and oil till combine.
3. Add in milk and mix.
4. Sift in dry mixture till combine then stop mixing.
5. Scoop in batter into lining baking paper till 1/2 full. Then put one big tablespoon of blueberry jam into the baking cup and swirl it together using a bread knife.
6. Bake for 12-15 minutes or toothpick inserted comes out clean. Leave to cool and enjoy!

This homemade blueberry jam is very healthy and tart. Not at all sweet. It is very different between fresh and frozen blueberries. The fresh ones really give you the tartness and the freshness. So do expect the blueberries jam to leak out its juice into the muffin. Very much indeed.

See how juicy this muffin is. Don't put too much though. I have been greedy. >.<

Happy baking =)

Blueberry Muffin w/ Crumb Topping

No one eats blueberry, so I have leftover in the fridge. I decided to make blueberry muffins. It is weird, you know. Many people who do not like fruits will eat them if they are incorporated into muffin, cake, cupcake, etc. That's how I do it, and that's how you can do it too! =P

Blueberry Muffin w/ Crumb Topping
Ingredients:
Crumble Topping
50g cold butter
50g sugar
50g flour

Steps:
Mix all ingredients using fingers and put into fridge till ready-to-use.

2 eggs
80g sugar
100g melted butter
100g flour
1 tbsp baking powder
1/2 tbsp vanilla extract
100g fresh blueberries

Steps:
1. Preheat oven to 350F. Line muffin pan with muffin liners/cupcake liners.
2. Beat eggs and sugar till slightly pale. Then, add butter and mix.
3. Add in flour mixture and vanilla extract till fully combine.
4. Gently fold in the fresh blueberries.
5. Scoop batter into muffin liners till 3/4 full, and sprinkle crumb topping on top each batter.
6. Bake in oven for 30-35 minutes. Adjust time accordingly. Some ovens need lesser time or more time.
7. Cool completely on wire rack.

Nothing can go wrong with blueberry muffins. The fresh blueberries really make the difference. Don't use frozen blueberries, the texture and taste are different.

Enjoy!

Glazed Coffee Cake Muffin

Glazed Coffee Cake Muffin

My boyfriend does not like sweet foods that much as me. But, there are still some exceptions, such as this coffee cake muffin. He loves coffee cake, so I plan to make him some.

I put another layer of cinnamon sugar in between the batter to give another layer of texture. Next time I should put more in between the batter, it does not show too much of it in the above photo.

It makes me fall in love to this muffin as well. It has the cinnamon, hearty smell when the muffins were taken out form the oven. I added the crumb topping on top of the batter. Crumb topping is also my boyfriend's favorite because it is gives you the crunch when eating instead of only a soft muffin texture. Not overly sweet muffin!

Enjoy!=)

Strawberry Jam topped w/ Graham Crackers Muffin

When I have nothing to do after school, I always do my baking! Hehe... This time I made a strawberry jam muffin topped with graham crackers. A really perfect combination as they bring different textures and taste. Sometimes leftover really could really surprise you! LOL

Strawberry Jam Muffin topped w/ Graham Crackers (makes 12 cupcakes)
Ingredients:
3 eggs
150 g butter, softened
100 g sugar
240 g cake flour
1 tbsp baking powder
1/2 cup strawberry jam
6 big pieces graham crackers, crushed

Steps:
1. Preheat the oven to 360F.
2. Beat the butter till fluffy and creamy. Then, add sugar and beat till slightly pale yellow.
3. Slowly add egg into the mixture one at a time to ensure no lumps will be created.
4. Then add cake flour and baking powder till fully mixed.
5. Add the strawberry jam till slightly incorporated.
6. Pour the batter into muffin cup till 1/2 full, and topped with graham crackers.
7. Put into oven for 20-25 minutes or until toothpicks inserted come out clean. Left aside to cool. Then transfer to wire rack to cool completely.

Very good for snacks or breakfast, not heavy or dense... You can feel the lightness since it  incorporates jam and graham crackers... It really surprises me how well they combine! I hope you will enjoy this recipe! =)
