When I have nothing to do after school, I always do my baking! Hehe... This time I made a strawberry jam muffin topped with graham crackers. A really perfect combination as they bring different textures and taste. Sometimes leftover really could really surprise you! LOL
Strawberry Jam Muffin topped w/ Graham Crackers (makes 12 cupcakes)
Ingredients:
3 eggs
150 g butter, softened
100 g sugar
240 g cake flour
1 tbsp baking powder
1/2 cup strawberry jam
6 big pieces graham crackers, crushed
Steps:
1. Preheat the oven to 360F.
2. Beat the butter till fluffy and creamy. Then, add sugar and beat till slightly pale yellow.
3. Slowly add egg into the mixture one at a time to ensure no lumps will be created.
4. Then add cake flour and baking powder till fully mixed.
5. Add the strawberry jam till slightly incorporated.
6. Pour the batter into muffin cup till 1/2 full, and topped with graham crackers.
7. Put into oven for 20-25 minutes or until toothpicks inserted come out clean. Left aside to cool. Then transfer to wire rack to cool completely.
Very good for snacks or breakfast, not heavy or dense... You can feel the lightness since it incorporates jam and graham crackers... It really surprises me how well they combine! I hope you will enjoy this recipe! =)
