This is the best chocolate cake that I have ever made, I absolutely love this recipe! Hehe... Once you tried it, you will know why... Whipped cream is the best thing that has ever created! LOL... I made this recipe with the leftovers that I have in my pantry, and it surprises me again!
"A-very-Ordinary" Surprise Chocolate Layer Cake
Ingredients:
3 eggs
100g sugar
100g vegetable oil
60g milk
80g cake flour
20g cocoa powder
1 tbsp baking powder
1 tbsp cream of tartar
120g whipped cream
250g semi-sweet chocolate
London Almond Cookies, crushed
Sugar water
Steps:
1. Preheat oven to 360F. Grease two 9 inch pan and put in parchment paper. Set aside.
2. Separate egg whites from egg yolks.
3. In a bowl, Put in egg yolks and 40g sugar, and beat till slightly pale.
4. Then, add in vegetable oil and mix.
5. Add in milk and flour mixture, and alternately beat into the batter. Set aside.
6. Use another bowl to beat the egg whites, cream of tartar, and 60g sugar. Use hand mixer/electric mixer till the batter become stiff peaks.
7. Mix the egg yolk mixture with the egg white mixture using spatula till fully incorporated.
8. Pour into the two 9-inch pans evenly. Put into oven for 30 minutes or until toothpicks inserted come out clean. Set aside and cool completely.
9. Melt the chocolate and whipped cream in a double boiler till shiny and creamy.
Assemble:
1. Cut the two 9-inch cakes into 4 slices. Apply sugar water on top\ of each slice of chocolate cake.
2. Apply chocolate ganache on top of each slice of cake, till all 4 layers are stacked up.
3. Then, pour the remaining chocolate ganache on top of the cake and let it drip down. Sprinkle the crushed cookies on top of the cake.
4. Put into the fridge till the chocolate ganache harden up, and then it's time to feast!
I put London Almond cookies here because I have some leftovers, and it is really a great combination. Something different from the usual chocolate cookies or chocolate pieces... The fragrant almond and butter flavor really something that surprise me! I hope it surprises you too! Enjoy!
