Red Velvet Cupcake with Vanilla Buttercream Frosting

I baked red velvet cupcake for my boyfriend to bring to work to share the yumminess of baked goods... Nothing can defeat a sweet temptation! I have seen many people eating red velvet cupcake, and this time I plan to make my red velvet cupcake without going through any recipes online... hope it will be a success!!



Red Velvet Cupcake with Vanilla Buttercream Frosting
(I plan to go with different kind of frosting instead of cream cheese frosting since my boyfriend is an addict to vanilla flavor LOL)

cake:
3 eggs
1/3 cup vegetable oil
80g sugar
1tsp vanilla extract
120g cake flour
1tsp baking powder
30g cocoa powder
1 cup milk/water (depends on the consistency of the batter)
1/8tsp salt
2 drops of red gel paste

1. Preheat oven 350F. Line cupcake tin with cupcake baking cups/liners.
2. Beat eggs and sugar till slightly pale.
3. Add vegetable oil and mix till combine.
4. Mix vanilla extract and salt till combine.
5. Mix the baking powder, cake flour and cocoa powder in another bowl and alternately mix this flour mixture and milk into step 4. Start with flour mixture, then milk, then flour mixture......and so forth till everything is added. It's better to end with flour mixture.
6. Add the red gel paste and beat till the mixture is fully mixed.
7. Spoon batter into cupcake tin lined with cupcake liners till 1/2 full. Bake for 16-18 minutes till done/insert tooth picks till come out clean, depends on your oven. Every oven varies.
8. Cool the cupcake in pan for 2 minutes. Then transfer to wire racks to cool completely. It is important to cool the cupcakes completely. At the same time while waiting, prepare the frosting.

Vanilla Buttercream Frosting:
1 cup butter (softened)
2 1/3 cup powdered sugar
2tsp vanilla extract
3tsp milk (add to adjust)

1. Beat butter and powdered sugar till mix and smooth. 
2. Add vanilla extract and beat.
3. Add milk little at a time, and adjust till smooth and form firm consistency. 
4. Pipe into piping bag and pipe on top of cooled cupcakes.

P.S This cupcake is super light and moist. The frosting is refreshing since the vanilla smells so good!
Try it and the loveliest red color will not disappoint you!
