Honeycomb


This is a honeycomb that amazed me, and it tastes like honey! Hehe.. =D
The recipe is relatively easy, just you need to be careful when cooking and be quick, no hesitant at all when making this treat..

You will need:
1/2 cup sugar
5 tbsp honey
1 & 1/2 tsp baking soda

Line a parchment paper on a baking sheet or on a board before you starts the process. Put in your sugar and honey into a pot on medium heat and cook them until they turn sticky for about 3 minutes. Do not go over 3 minutes, it will burn! Then, use a spatula or a whisk to stir while pouring in the baking soda. This step has to be quick. Pour the baking soda, and stir. It will starts its chemical reaction. Stop whisking and quickly pour this onto the parchment paper. Let it cool and it will harden.
Break into desired portion.

Chocolate Walnut Granola


Homemade granola is the best when you can mix in anything you want, and omit those you do not like. =D. So the recipe for this granola is very easy.

You just need:
2 cups rolled oats
3/4 cup almond butter
1/4 cup honey
1/2 cup chocolate chunks
1/2 cup walnuts, chopped

Preheat oven to 325 F. Line parchment paper on baking sheet. Mix everything till well combine. Pour onto baking sheet and bake for 15-20 minutes till dry. Cool completely.

You have to try this recipe! It is healthy and yummy! =)

"Rubbery" Asian Mochi

This is an Asian recipe that my bf really love to eat. It is kind of "rubbery" texture due to the glutinous rice flour I used.

"Rubbery" Asian Mochi
Ingredients:
100g glutinous rice flour (I used sweet glutinous rice flour)
1 tsp green tea powder
100g water

Kinako (soy bean flour)
Honey

Steps:
Mix all ingredients till a soft dough is formed. Place shaped dough into boiling water to cook till the dough floats, and leave to boil for another 2-3 minutes. Put into a bowl of ice/cold water to remove slimy texture. Then put into a bowl of kinako and honey to coat. Dessert is served!


This is how it looks like after coated and left for awhile before consumed. This dessert is best to consume on the spot. I do not encouraged to leave any leftovers, it gets harden easily.

Healthy Oatmeal Raisin Cookies


Very yummy oatmeal cookies! I adapted this from a youtuber named "hockie", a Japanese mother who has two cute kids. The recipe is easy and healthy. I made some changes onto her recipe though. Hope you like it. =D

Ingredients:
3 tbsp vegetable oil
3 tbsp mango juice (any juice is fine)
3 tbsp honey
3/4 cup raisins (more is fine too)
150g all-purpose flour
1 tbsp baking powder

Steps:
Mix all till combine. Bake in preheated oven of 350 F for 15-20 minutes. Cool on wire rack.

Very easy recipe and also healthy. No egg & no milk. You can add in any nuts if you like too. =)

Tips:The batter is very sticky, so handle carefully. You can put some flour onto your hands first before you scoop onto the baking sheet.

Honey Cupcakes w/ Honey Whipped Cream Frosting



I was browsing through my pantry yesterday, and realized that I still have honey left, quite a lot actually. So, here they come, honey cupcakes. This type of cupcake is very moist, soft and fluffy. I really like the texture. It is just like 'not-eating-anything" or "you-can-finish-it-in-one-bite" type of cupcake. The frosting really helps to describe the cupcake since I am not using any butter for the frosting, just regular heavy whipped cream. Both my sister and my boyfriend prefer this version more than the "butter frosting version". It is much, much, much lighter. Love it with the "simply" simple rainbow sprinkles. Keke.. >.<

Honey Cupcakes w/ Honey Whipped Cream Frosting
Ingredients:
3 large eggs
80g honey
20g sugar
100g cake flour
30g vegetable oil
30g soy milk
1 tsp salt

Steps:
1. Preheat oven to 350 F. Line cupcake liners in cupcake pan.
2. Beat eggs, honey and sugar on high speed with electric mixer till the batter becomes frothy and pale yellow.
3. Add in soy milk and salt. Mix well.
4. Add in cake flour and fold it. Mix well.
5. Mix oil into the batter.
6. Scoop batter into cupcake liners till 80% full. Bake for 15-20 minutes or till golden brown.
7. Cool completely on wire rack.

*My cupcakes shrink right after they were taken out from the oven. This type of cupcakes are the hardest to bake. Even I have the fear when baking this type of fluffy cupcakes. A small little mistake may lead to the failure of the cupcakes.

However, the cupcakes still taste good, very strong honey smell.



Whipped cream frosting:
80g heavy whipped cream
40g powdered sugar

rainbow sprinkles

Steps:
Beat the heavy whipped cream and powdered sugar till form still peaks. Put into piping bag and pipe onto cooled cupcakes. (Make sure the cupcakes are completely cooled to avoid the whipped cream from melting.) Then, sprinkle any desired topping of your own choice. I used rainbow sprinkles. The cupcakes turn out to be unexpectedly pleasant. Lol.. =P

Honey-Coated Granola



Honey-Coated Granola
Ingredients:
3 cups rolled oats (not the instant one)
1/2 cup vegetable oil
1/2 cup honey
1 cup sliced almond
1/2 tbsp salt
1 tbsp vanilla extract

Steps:
1. Preheat oven to 320F.
2. In a large mixing bowl, mix vegetable oil, honey, salt and vanilla extract till incorporated.
3. Add oats and almond into the mixture until well mixed.
4. Place on a baking pan and bake for 30-40 minutes. Stir occasionally every 10 minutes to avoid granola from being burned. If the granola turns light brown, then it is done.
5. Let it cool in pan. Enjoy as breakfast or as gift for friend.

It is a very easy recipe and it is very healthy also. I hope that you will enjoy this recipe! =)
