Snowskin Mooncake with Red Bean Paste
First attempt in trying to make Snowskin Mooncake, and it is a success! I'm a happy girl!
It still needs improvement, but I'm there soon!
The taste and method is correct, just it needs more "refrigerator" time. Remember to put in the fridge for at least 2-3 days before consume, it tastes even better and firm after few days in the fridge. Of course you can eat it right after you make it, it will have the texture of "muachi".
Ingredients:
(adapted from Nasi Lemak Lover)
110g cooked glutinous rice flour (koh fun)
110g powdered sugar
40g vegetable shortening
140g cold water (must be cold water)
colored gel/paste (I use green and pink, the lighter green is pandan extract)
red bean paste
Steps:
1. Mix rice flour and powdered sugar. Rub in the shortening. Add in the cold water and mix with hand till all combined. Put drops of colored gel into the dough after divided them into three portions.
2. Divide them into balls and flatten them. Wrap around paste and make into a ball. Coat with cooked rice flour to prevent sticking to the mold. Use mooncake mold to make shapes. Done!

Pandan Cupcakes w/ Sprinkles
I really love fluffy and moist cupcakes. This cupcake was made on Monday, and I have forgotten to post it. Hehe.. I have used the same method as the honey cupcake in previous post. However, it's yummy. >.<.
Pandan Cupcakes w/ Sprinkles
Ingredients:
3 large eggs
80g sugar
100g cake flour
30g vegetable oil
30g soy milk
1 tsp salt
2 tbsp pandan essence
Steps:
1. Preheat oven to 350 F. Line cupcake liners in cupcake pan.
2. Beat eggs and sugar on high speed with electric mixer till the batter becomes frothy and pale yellow.
3. Add in soy milk, pandan essence and salt. Mix well.
4. Add in cake flour and fold it. Mix well.
5. Mix oil into the batter.
6. Scoop batter into cupcake liners till 80% full. Bake for 15-20 minutes or till golden brown.
7. Cool completely on wire rack.

Tiramisu Pandan Cupcake
Tiramisu Pandan Cupcake (around 6 cupcakes)
Ingredients:
1 egg
80g sugar
80g vegetable oil
20g milk
2 tbsp pandan essence
100g flour
1 tbsp baking powder
6 ladyfingers, into half
2 tbsp coffee powder
1/2 cup hot water
Steps:
1. Preheat oven at 350F.
2. Beat egg, sugar and oil till fully mixed.
3. Add pandan essence into milk, and pour milk mixture and flour mixture into step 2.
4. Dissolve coffee powder with hot water and dipped the ladyfingers into the coffee liquid.
5. Scoop batter into cupcake liner till 1/2 full, and add 2 half ladyfingers to each cupcake. Then scoop some batter onto the cupcake until it covers the ladyfingers till 3/4 full. Do the same to the rest of the cupcakes.
6. Bake in oven for 25-30 minutes or toothpick inserted comes out clean. Cool on wire rack.
It's something different than the usual tiramisu flavor. I want to try some different combination that tiramisu coffee flavor can do, so I try out with one of my favorite, pandan flavor. The pandan flavor is not that overpowering, as well as the coffee flavor. So, it does not come out as weird. It is just something different, I guess. LOL.

Pandan Coconut Cupcake
Pandan Coconut Cupcake (around 6 cupcakes)
Ingredients:
1 egg
60g sugar
60g vegetable oil
25g milk
80g flour
1/2 tbsp baking powder
1 tbsp pandan essence
30g desiccated coconut flakes
Steps:
1. Preheat oven at 350F.
2. Beat egg and sugar till slightly pale. Add in oil.
3. Mix pandan essence into milk. Pour this mixture and flour mixture into the step 2 and mix well.
4. Scoop batter into cupcake liner till 3/4 full, and sprinkle coconut flakes onto the cupcake.
5. Bake in oven for 20-25 minutes or toothpick inserted comes out clean. Cool on wire rack.
The texture is not the best, but it is still soft and moist. If you keep till another two or three more days, remember to reheat in microwave by sprinkling some water on top of the cupcake to give it more moisture. For another time of making this recipe, I will definitely add 20g more oil to give it more moisture.

Baking Frenzy (Green Tea, Pandan, Chocolate)
There are 3 types of cupcakes here, Green tea w/ green tea frosting cupcakes, Pandan w/ pandan frosting cupcakes, and Chocolate w/ chocolate frosting cupcakes. Sometimes I was too crazy to bake several types of bakery within a day. It's like a drug that makes me could not get out of the baking frenzy. LOL. I know the cupcakes do not look too pretty because I was using new baking cups that are relatively too small compared to the normal cupcake liners that I have used all the while. >.<.

Red Velvet Cupcake & Pandan Cupcake
A red velvet cake decorated with vanilla buttercream frosting made from scratch. The frosting was too sweet, I guess I put too much powdered sugar..>.<..
This is a pandan cupcake topped with pandan flavor buttercream frosting. The color does not show any green color, I put too little, that's why... Next time have to put more pandan essence... If you want to have more colors, just blend the pandan leaves with water, it will definitely give you a deep green color.. The taste of it is okay, just lacking in pandan flavor...Hehe.. will be better next time...>.<...
