Bento #4: Triangular Tuna Mayo Rice Bento


I found this photo in my phone, a very old bento photo. So I guess I'll just post it here. This is a seaweed sprinkles filled with tuna mayo rice bento in triangle shaped. Do not make it overnight unless wrap tightly with cling wrap paper individually and put into the fridge. It is because if you make it the day before and put into fridge without any cling wrapper, the rice turned very dry, it has lost it's water due to the temperature in the fridge. It is best to make it that day, and finish it that day. So enjoy a lovely, simple bento with tonnes of flavor!

Basic Chocolate Sponge Cake


A simple basic chocolate sponge cake is one of my favorites! I love the simplicity, the spongy texture and the fragrant chocolate smell! Nothing can beat that! It can also be used as a base for any birthday cake or cake decorations.

Ingredients:
4 eggs
80g sugar
60g vegetable oil
60g milk
20g cocoa powder
70g cake flour
1 tsp baking powder

Steps:
1. Preheat oven to 350 F. Grease and line an 8-inch round pan.
2. Beat eggs and sugar at max speed till pale and fluffy. Beat in oil. Alternately fold in the dry mixture and the milk using a spatula or a balloon whisk.
3. Bake in oven for 40-45 minutes or toothpick inserted comes out clean. Invert cake pan on wire rack to let it cool completely.




It is indeed a very light, spongy and fluffy cake! I absolutely like it!

Make it and you will not regret anything of it!

Spongy banana loaf cake


With two very-riped bananas left, the end results is always a spongy banana cake! The fragrant makes you awake and happy! Haha.. =D

I make it into a loaf this time, so preheat oven to 350 F and grease pan, line with parchment paper. Bake for 45-50 minutes till toothpick inserted comes out clean.

The cake this time has more darker color tone at the bottom layer, and the top layer is more light in color. I suspect that this happened due to the uneven mix of oil. However, it still tasted good, according to my bf, so that's okay then.. =P




Enjoy your cake with a cup of coffee or milo or milk!

Easy Chocolate Pudding


Easy Chocolate Pudding! I was thinking about eating pudding since my friend showed me a pudding she made, but I'm lazy to make complicated pudding. So, with the leftover stuff in my pantry, I made myself an easy chocolate pudding made with only 3 ingredients!

Easy Chocolate Pudding
Ingredients:
100g soymilk
20 mini marshmallows (or more, if you want it to be more firm)
25g chocolate chips

Steps:
Put all ingredients into a microwaveable mug and microwave it for 1 minute on high. Then stir it and microwave for another 1 minute. Stir it again. Microwave it for another 30 seconds if not all ingredients are melted. Then cover with cling wrap and fridge it for 1-2 hours or overnight.

The texture is soft and smooth, and not very firm, but i like it! I think I'm gonna change the recipe next time by using unsweetened soymilk or unsweetened chocolate because to me, it is kinda sweet. So, here it goes! easy pudding! You can make it into any other flavors such as strawberries, or just plain pudding with vanilla flavor. YUMMY!

"Very-Like" Chocolate Bar Cookies


Chocolate-shaped chocolate cookies! Very chocolatey, milky, nutty, crunchy cookies! Super love them! Cute and yummy! What more can you ask for? Hehe.. =D

I adapted this recipe from mososgourmet, a Japanese youtuber as well, with some adjustment on my own. Hope you guys like it!

"Very-Like" Chocolate Bar Cookies
Ingredients:
20g melted butter
40g chocolate, melted
50g cake flour
10g cocoa powder
20g almond flour
20g sugar
20g milk (Must add in to create a better dough)

Steps:
1. Preheat oven to 350F.
2. Melt butter and chocolate. Mix in dry mixture, and milk till a dough id formed. Put into a mold with chocolate bar-shaped and press firmly into the mold. Wrap with cling wrap paper and put into fridge till set for about 30 minutes.
3. Take it out and slowly take it our form the mold. Cut off any excess. It is like a chocolate bar at this point.
4. Bake in oven for 10-12 minutes. Do not over bake. Let cool on wire rack.

Very chocolatey taste cookies! I love the addition of almond powder, give it a nutty and crunchy texture! Will definitely make it more often, the mold is really lovely, and very handy!



Bear-Shaped Pork Floss Bread


Cute Bear Shaped Bread filled with pork floss! I have adapted the recipe from mosogourmet, a japanese youtuber who is super talented! I have changed the filling by using pork floss since I have no eggs to make any custard. However, the bread is lovely, but needed to be consumed on that day for better texture. It turned hard and dry the next day I eat it.

Bear-Shaped Pork Floss Bread
Ingredients:
200g bread flour
5g salt
5g yeast
15g sugar
120g water (you can use milk)
15g heavy cream
15g butter, softened

Steps:
1. Mix all the ingredients together except butter till combine, then add in butter and mix till smooth and shiny. Put into a greased bowl to let it proof for 1 hour.

2. The 1st proofing will double in size.

3. Put onto a floured surface table, and roll out using a rolling pin. Cut into 8 round shape weighing around 35-40g each. The remaining dough is used to make the ears. Wrap pork floss with the bread, and assemble the ears onto the bread using some water as "glue". Let proof for another 30-45 minutes till double in size.
 4. Preheat oven to 320F. Bake the end product in the oven for 10 minutes. Then lower the oven temperature to 300F, and bake for another 8-10 minutes. Let it cool completely.
5. Mix water and cocoa powder to draw the face part of the bears. Enjoy!

Cute Bear Cookies


You know I love cute stuffs right? And , here you go! Cute Bear cookies (it is still not perfect though, need more skills >.<) I love the taste and the cute little eyes and nose, it makes me wanna eat more!

Cute Bear Cookies
Ingredients:
1 egg yolk
80g vegetable oil (you can use melted butter too)
80g sugar
200g cake flour (all-purpose flour is okay too)

Steps:
1. Preheat oven to 340 F. Line baking sheets with parchment paper. Prepare bear cookie cutter and set aside.
2. Mix egg yolk with oil and sugar. Mix till combine.
3. Sift in cake flour and use a spatula to mix till combine.
4. Set the dough in fridge for 30 minutes wrapped with cling paper.
5. Roll out the dough using a rolling pin and cut out bear shaped using a cookie cutter. Line on baking sheets.
6. Bake for 15 minutes. Let cool on wire rack.

Icing:
Mix powdered sugar and water till smooth for the white part. Mix powdered sugar, cocoa powder and water till smooth for the black/brown part. Use toothpicks to make the eyes and nose. Let till set. Enjoy!
