Apple Yogurt Cake


This moist fruit cake seems burnt on top, but it is fine. It is made by using 2 apples, 2 eggs, 200g plain yogurt, 100g cake flour, 1 tsp salt, 100g sugar, 1 tbsp baking powder, 30g vegetable oil. Mix altogether and pour into greased 9-inch round pan. Bake at 350 F for 35-40 minutes. It tastes even better in fridge, served cold.I adapted this recipe from Ochikeron, a famous Japanese youtuber. The yogurt is what makes the cake healthy.

Simple Chocolate Chip & Walnut Cookies


Who does not like a good old traditional chocolate chip that is both chewy and crunchy at the same time? I do! So here is some very simple and yet satisfying treat!

Ingredients:
1 stick butter, softened
120g brown sugar
1 egg
180g all-purpose flour
1 tbsp baking powder
1 tsp baking soda
1 tsp salt
1 tbsp vanilla extract
100g dark chocolate chips
100g walnuts, chopped

Steps:
1. Preheat oven to 350 F. Line parchment paper on a cookie sheet.
2. Beat butter, sugar till fluffy and pale. Add in egg and beat till fully mixed.
3. Add in all flour mixture, and vanilla extract. Fold in chocolate chips and walnuts.
4. Scoop dough into a desired shape, a ball shape, and flatten it.
5. Bake for 15-18 minutes, depending how big your cookie is. Cool on cookie sheet for 10 minutes before transferring to wire rack to cool completely.





Easy 3-Ingredients Nutella Cookies


This is a very, super easy nutella cookies recipe. You just need three ingredients. I saw on the net that it is very popular, so I have to do it!

Ingredients:
1 cup all-purpose flour
3/4 cup Nutella
1 egg, beaten

Steps:
1. Preheat oven to 350 F.
2. Beat and mix all ingredients till combine.
3. Shape into balls and flatten it on cookie sheet lined with parchment paper.
4. Bake for 12-15 minutes and cool completely.
5. Enjoy! How easy is that?

Most importantly, it is very yummy!

Walnut Brownie Fudge Pie


This brownie fudge pie is a gift for one of my friend as a Thanksgiving edible gift. First time making a fudge pie, and it has been a long time I have made a pie since no one close to me really loves a pie. But, this recipe does make me change my thought about a pie, it looks and smells great!Brownie+fudge=pie, a great combination!

Ingredients:
Tart:
1 egg yolk
180g all-purpose flour
8 tbsp cubed butter, cold
3 tbsp icing sugar
4 tbsp water
1 tbsp salt

Filling:
4 large eggs
2 sticks butter, melted
8 oz chocolate chips, melted
1 & 1/2 cups brown sugar
8 tbsp all-purpose flour
1 tbsp vanilla extract
toasted walnuts

Steps:
1. Combine all the tart ingredients till a dough formed. Set in fridge until ready to use.
2. Melt the butter and chocolate chips till all melted and combined. Slowly add in beaten eggs, stir while pouring constantly to prevent eggs from cooked.
3. Add in sugar and vanilla and stir.
4. Rolled out the dough and place on a pie pan, I use a 9 inches round pie pan that is greased.
5. Pour the filling into the pie dough and top with toasted walnuts. You can use any nuts you want such as pecans.
6. Bake at preheated oven 350 F for 75 minutes. Let it cool completely before you slice it in.

Chocolate Chip Banana Bread

I have some leftover bananas at home (I guess I always have leftover bananas at home >.<), so I'm making a easy chocolate chip banana bread.
It is easy because the ingredients are little, and you do not need any complicated tools, just a large bowl & a spoon/spatula/whisk & a brownie pan lined with parchment paper. This recipe does not require oil at all!

Ingredients:
2 ripe bananas, mashed
2 large eggs
1 & 1/2 cups all-purpose flour
1 cup granulated sugar
1 tbsp baking powder
1 tsp baking soda
1 tsp salt
1 tbsp vanilla extract
1 tbsp cinnamon (optional)
1 cup dark chocolate chips

Steps:
1. Preheat oven to 380 F. Line a brownie pan with parchment paper.
2. Mix bananas, eggs, sugar and dry mixture till combined. Then stir in chocolate chips.
3. Pour into the brownie pan, sprinkle some sugar or cinnamon sugar mixture on top of the batter (optional) and bake for 40-45 minutes.
4. Cool completely, slice and enjoy with a cup of drink!

Easy Rainbow Muffin

A Rainbow Cake that is very easy! I am using a french vanilla box cake mix since I have one that I bought long time ago (it is too cheap to not buy >.<). How to make it more appetizing and lovely? Add in Colors! I have never attempted any rainbow cake before, so I am thinking of giving it a try.

Ingredients & Steps:
1 vanilla cake mix (you can use any cake recipe you like, preferable white cake or yellow cake, not chocolate cake; follow the instructions on the box cake mix)
Prepare 4 colors (I only have 4 colors, I guess I cannot call it a rainbow cake then)
Divide the cake mixture into 4 bowls evenly, mix in the colors. Alternately put different colors of batter into a cupcake or muffin tins. Mine came out more like muffins. I bake it at 350 F for 20-25 minutes. Cool completely. It came out very moist and fluffy.

Look at the lovely vibrant colors! =D

Pumpkin Chocolate Chip Loaf Bread


Thanksgiving has long past for over a month, but I have made something for that special day, a pumpkin chocolate chip loaf bread. Everyone eats pumpkin during the months of October, November and December, it is the season of the year.

Ingredients:
2 large eggs
200g brown sugar (you can use granulated sugar or make it half-half)
100g vegetable oil/1 stick melted butter
80g milk
220g all-purpose flour
2 tbsp baking powder
2 tbsp cinnamon
1 tsp nutmeg
1 tsp salt
1 can pumpkin puree
150g chocolate chips

Steps:
1. Preheat oven to 350 F. Grease loaf pan.
2. Beat eggs, sugar and vegetable oil till combine.
3. Alternately add in dry mixture and milk. Lastly, mix in pumpkin puree.
4. Stir in chocolate chips. Pour into the greased loaf pan and bake for 60-70 minutes or toothpick inserted comes out clean.
5. Let it cool,slice and enjoy!



It is a very moist recipe. The spices make the bread smells good!

Granola Muffins


I have previously posted a granola recipe, and due to some leftovers, I decided to make them into muffins, easy to consume, and healthy to eat! You can find the granola recipe here Granola.

The recipe for the muffins is as follows:
Ingredients:
120g butter/ 1 stick butter, softened
60g granulated sugar
60g brown sugar
2 eggs
220g plain yogurt/milk
280g cake flour
2 tbsp baking powder
1 tbsp salt
250g granola (any granola recipe works fine)

Steps:
1. Preheat oven to 350 F.
2. Beat the butter and sugar till fluffy and pale.
3. Beat in the egg one at a time until fully incorporated.
4. Add in the yogurt/milk and mix.
5. Add in the dry mixture and mix.
6. At last, add in the granola, and fold it in.
7. Scoop into muffin pans/cupcake pans till 3/4 full and bake for 25-30 minutes ot toothpick inserted comes out clean.
8. Cool completely and enjoy!

Eggless Tiramisu


Sorry for the hole in the picture, my sister ate them before I got the chance to take the photo. Haha.. =D

It is a Tiramisu, very easy recipe, with NO EGG! How good is that?! I do not like tiramisu with egg, since I am little afraid in consuming raw eggs. However, this recipe makes it tastes just the same.

Ingredients:
6-8 ladyfingers
1 cup hot water
1-2 tbsp coffee powder/espresso powder
cocoa powder
1 cup whipping cream
1/2 cup mascarpone cheese
50g sugar

Steps:
1. Beat the whipping cream and sugar till stiff peak. Fold in the mascarpone cheese till combined.
2. Mix the hot water with coffee powder. Set aside to cool.

Assemble:
Ready a container and dip your ladyfingers into the coffee mixture, do not soak, just plainly dip two sides. Cover the bottom. Scoop some mascarpone mixture onto the ladyfingers. Sprinkle some cocoa powder. Repeat the steps till everything is gone. Put into fridge and enjoy!

Easy No-Bake Fudge, Two Ways


It is a fudge that only contains two ingredients! Easy, quick and yummy! My sister loves to eat fudge, so I'm making her a fudge to release her stress from the tests. =D

Ingredients:
1 can of condensed milk
3 to 3 &1/2 cups dark chocolate chips (I used 60% chocolate chips)
2 tsp salt

Oreo cookies, chopped (optional)

Steps:
Line a brownie pan with cling wrap paper for easy removing. Melt the chocolate chips and condensed milk in microwave, slowly at times to prevent from burning. Remove and stir well. Add in salt and stir well. Pour into pan and put the Oreo cookies on top of half the mixture. Gently press into the fudge. Let it cool down at room temperature for at least 2-3 hours or until set. Do not put into fridge. Best consume within 2-3 days.

Raspberry Chocolate Overnight Oatmeal

It is a popular overnight oatmeal recipe. It is very forgivable, you can add in anything you like as long as they are edible. LOL.

I bought some mason jars and decided to make this since I saw that it is very popular on the net.

For this recipe, I put in 1 cup of rolled oats, 1 cup of almond milk, 1 tbsp of cocoa powder, 2 tbsp of honey, some fresh raspberries, some toasted sunflower seeds. Put on the lid and put it in fridge overnight. The oat will soak in all the milk, and make it soft. You can enjoy your healthy version of overnight oatmeal with any other favorite ingredients of yours!

Pork Floss Mayonnaise Bread

This is another bread baking project I made that contains pork floss. I love pork floss on anything! IT is very yummy!

Ingredients:
Dough:
200g bread flour
2 tbsp sugar
2 tbsp yeast
1 egg, beated
1/2 tsp salt
100ml warm water/ milk
30g cold butter

Pork floss
egg wash
mayonnaise

Steps:
1. Make the dough by mixing everything together and left to proof for an hour in a warm place.
2. Cut into 10-12 pieces, or desired numbers (depends on how big you want your breads to be).
3. Place pork floss onto each flatten dough, and make into a ball.
4. For the mayonnaise version, I put some mayonnaise on top of a flatten dough and put some pork floss, then I roll it up and seal the two sides up. Then, I cut the middle to reveal some filling, and place some more mayonnaise and pork floss on top.
5. Set aside to proof for 30 minutes, and brush some egg wash on each bread.
6. Bake at 350 F for 15-18 minutes. Left to cool completely.



The pork floss sucks up all the moisture, making it kinda dry, unlike the apple bread. So I think it is best to bake the bread first, then cut it into half, and put the pork floss. Do not put the pork floss into the bread and bake it in order to enhance the moisture in the bread.

Apple Bread


This is an apple bread in an apple form. I saw it while browsing the net, so I have to make it! =) Cute things just get my attention =D

Ingredients:
200g bread flour
2 tbsp sugar
2 tbsp yeast
1 egg, beated
1/2 tsp salt
100ml warm water/ milk
30g cold butter

Apple filling:
1 apple, cut into cubes
40g sugar
1 tbsp cinnamon

Steps:
1. Mix all ingredients of the dough mixture into a ball, and let it rise at a warm place for 1 hour.
2. Divide the dough into 8-10 pieces.
3. Cook the apple filling on a stove or a microwave till soften. Discard the juice/water.
4. Flatten each dough and place apple filling into it and wrap till a ball shape formed. Press a pretzel stick as the stem. Left to proof for another 30 minutes, and continue for the rest of the dough.
5. Brush egg wash on top of the dough and bake at preheated oven of 350 F for 15-20 minutes.
6. Left to cool and enjoy!



The above pictures shows how the dough looks like before and after it rises. 



It is best to finish within a day, it gets tough over a day, depends on what is the temperature and weather at your place of making.

Honeycomb Ice Cream


Honeycomb ice cream without using any machine! I adapted this recipe from Gemma Stafford, a youtuber!

The easy ice cream recipe needs only two ingredients which are condensed milk & heavy whipping cream.

2 cups heavy whipping cream
1 can condensed milk

Whip the cream until stiff peak form, and pour in the condensed milk. Continue whisking till stiff peak form again. Put in your desired filling, and consume! Or you can put it into the freezer and eat it when hard.

Honeycomb


This is a honeycomb that amazed me, and it tastes like honey! Hehe.. =D
The recipe is relatively easy, just you need to be careful when cooking and be quick, no hesitant at all when making this treat..

You will need:
1/2 cup sugar
5 tbsp honey
1 & 1/2 tsp baking soda

Line a parchment paper on a baking sheet or on a board before you starts the process. Put in your sugar and honey into a pot on medium heat and cook them until they turn sticky for about 3 minutes. Do not go over 3 minutes, it will burn! Then, use a spatula or a whisk to stir while pouring in the baking soda. This step has to be quick. Pour the baking soda, and stir. It will starts its chemical reaction. Stop whisking and quickly pour this onto the parchment paper. Let it cool and it will harden.
Break into desired portion.

Caramel & Squash Custard Cake



It is also another Halloween baking that I have done but has not been posted. It is a custard cake that is served cold. It is like pudding. I adapted it from Ochikeron, a blogger and youtuber, and changed the recipe to my own preference.

Ingredients:
The top part:
80g sugar
4 tbsp water

Custard/Filling:
5 eggs
600g squash, steamed and mashed
500ml milk
180g sugar

Steps:
1. Cook sugar and water to make caramel (top part). Cook in pan on medium low heat till bubbly form formed. Pour into a greased 9 by 9 inch loaf pan immediately before it hardens. Put in fridge to set.
2. Heat milk and sugar in the pan at medium low heat till the mixture simmer. Slowly pour beaten egg mixture little by little, and mix thoroughly to prevent egg from cooked. Strain the mixture through a sieve. Add in the mashed and cooked squash into the mixture. (You can strain after this step to get a finer texture, but I prefer some "meat" inside my custard.)
3. Bake in preheated oven at 350 F for 50-60 minutes. Cool in fridge then flip it over and serve!

Halloween moist chocolatey cupcakes

It is a Halloween baking project that I have done with Halloween-themed sprinkles that I bought for only $1 at Target! So cute, how to resist with that price? >.<

This is a very moist chocolate cupcakes topped with melted chocolate and Halloween sprinkles. I am surprised that it turns out to be very moist. Very happy with the outcomes!

Ingredients:
2 large eggs
1 cup brown sugar
1/2 cup vegetable oil
1/2 cup milk
1 tbsp vanilla extract
1/4 tsp salt
3/4 cup all-purpose flour
1/2 cup cocoa powder (I used the Dutch-processed one)
1 tbsp baking powder
1/2 tbsp baking soda

melted chocolate
sprinkles

Steps:
Preheat oven to 350 F. Beat eggs, sugar, and oil till fluffy. Add in dry mixture and milk alternately. Scoop batter into cupcake liners till 1/2 full. Bake for 20-22 minutes. Cool completely on wire rack. Apply some melted chocolate onto cupcake and topped with sprinkles.
