Very Moist Banana Cupcake w/ Banana Custard Filling


Very moist banana cupcake with banana custard filling. I put them into the fridge which makes them even more moist. It is like eating a cake & a pudding at the same time!

Ingredient:
Banana cake:
banana cake

Banana Custard Filling:
banana custard

Steps:
Wait till the cake is cooled, cut out a small round shape on top to insert/pipe the banana custard into the cupcake, and put the cut round cake back, on top of the custard. Chill in fridge and serve. (Wrap in cling wrap to ensure the cake does not dried out in the fridge.

Pink Piggy Cake


This a birthday cake for my friend who insisted a piggy cake, and there you go! He showed me a photo of his cake, this cake, I can say it resembles maybe 60% of the model he showed me. The 40% is left for the viewers to judge. Haha. =D. I have had a rough idea how to make it, but the only problem I got was the nose because it is hard to make a 3D nose. I found a person who decorates a piggy cake using melted white chocolate that is dyed pink. What a wonderful idea! The youtuber is called "pankobunny". She has wonderful recipes, take a look at hers.






It is consists of one pink-colored vanilla cake, and one chocolate cake. The filling is whipped cream. The pink piggy cake is dyed pink whipping cream. Lovelt!

Duo-Crusts Chocolate Tarts

Two different chocolate tarts with the same filling, different crusts. One is baked, one is non-baked. Both equally delicious and different textures, different tastes.

Ingredient:
Crust:
1/2 stick butter, soften
50g sugar
1 egg
150g cake flour
1 tsp vanilla extract
Milk (for adjustment)

No-bake crust:
Crushed graham crackers
Peanut butter

Filling:
200g melted chocolate
1 cup whipping cream
50g sugar
60g butter, melted

Steps:
For the baked crust: Cream all ingredients together till a dough formed. Put into lined paper cups and bake for 12-15 minutes at 350F. Cool on wire rack completely.
For the no-bake crust: Mix all ingredients together and put into prepared pan/cups.
Filling: Put all ingredients into a saucepan and heat on medium till all incorporated.

Assemble:
Scoop filling into cooled crusts. Cool in fridge before consume for better texture.

Tokyo Banana


This is banana custard recipe wrapped inside a sponge cake, and it is called Tokyo Banana. Very nice name! I saw in a youtube channel, Ochikeron made this and I was so impressed! I immediately knew that I need to make this recipe. I made some adjustments on my own to this sweet treat.

Tokyo Banana
Ingredients:
Sponge cake base:
2 eggs
20g oil
60g cake flour
60g sugar

Beat eggs and sugar till pale and fluffy, Add in all other ingredients and gently mix them, pour into a brownie pan or anything pan of your own (prefer to be a smaller pan), and bake at 350F for 10-15 minutes. Left on wire rack to cool. Cut the cake into half and into squares.

Banana custard filling:
1 mashed banana
1 egg
2 tbsp corn starch
4 tbsp sugar
150g soy milk

Place all of the ingredients into a bowl and mix till combine. Sieve through a strainer till smooth. Place on stove to heat on medium till batter thickens. Stir occasionally. Be careful not to burn the mixture. Pour into a bowl or a piping bag to cool in fridge.

Assemble:
Place a cling wrap onto the table, and place a piece of cake on top of the cling wrap. Squeeze cooled banana custard onto the cake, and wrap like wrapping a Swiss roll. Tighten up both ends, and put into fridge to set and cooled. Best eat cooled! Really yummy!

"Rubbery" Asian Mochi

This is an Asian recipe that my bf really love to eat. It is kind of "rubbery" texture due to the glutinous rice flour I used.

"Rubbery" Asian Mochi
Ingredients:
100g glutinous rice flour (I used sweet glutinous rice flour)
1 tsp green tea powder
100g water

Kinako (soy bean flour)
Honey

Steps:
Mix all ingredients till a soft dough is formed. Place shaped dough into boiling water to cook till the dough floats, and leave to boil for another 2-3 minutes. Put into a bowl of ice/cold water to remove slimy texture. Then put into a bowl of kinako and honey to coat. Dessert is served!


This is how it looks like after coated and left for awhile before consumed. This dessert is best to consume on the spot. I do not encouraged to leave any leftovers, it gets harden easily.

Bento #7: Emoticon Bento

A very "emotional" bento I made. It is not perfect, but I really like them. I think I perform the best under stress, when there is time constraint. >.<

This bento consists of sausage, tamago, brocolli, rice that topped with seaweed and cheese for face expressions.

Colorful Cake-Pops


Aren't they lovely? Cake pops they are! I have always wanted to make cake pops because they look cute. But, cake pops looked very sweet to me, so I want to try to make it on my own to see if I could cut down the sugar. Apparently, not really, maybe just a little. Once in awhile is fine though.

Colorful Cake-Pops
Ingredient:
Cake base of your own (I am using the leftover from the totoro cake, no point in wasting them)
Buttercream:
1/2 cup butter
1.5 cups of powdered sugar
2 tsp vanilla extract
2-3 tbsp heavy cream/ milk

sprinkles of your choice

melted chocolate (I am using candy melts, easier to coat)

Steps:
Crumble all the cake base and set aside. Beat the buttercream frosting till combine. Mix frosting and crumbled cake pieces till form a dough. Make into individual dough, and poke a cake-pop stick dipped in candy melts into the shaped cake pop. Put into fridge for at least 1 hour. Take it out and coat with the candy melts and topped with toppings. Set aside to firm. It is ready to serve, or you can put into fridge till ready to serve.

Chocolate-Covered Frozen Banana


Chocolate covered frozen banana topped with toppings of your choice! I really love this combination,very yummy and COLD! I first ate this in Disneyland and fell in love, and it seems easy to make, so here you go!

Chocolate-covered Frozen Banana
Ingredients:
4 bananas, cut into halves
chocolate, melted
pistachios, chopped
rainbow sprinkles
almond, chopped

8 ice cream sticks

Steps:
Cut bananas into halves, and put a stick into each banana and freeze it. Melt chocolate, and prepare all the toppings. Set aside. Dip the banana into the chocolate and quickly topped with the toppings since it gets harden quite quickly. And set aside to till firm. Put it back into the freezer or it is ready to serve!

Totoro Birthday Cake

I am sooooooo excited to introduce this cake to you! It is a Totoro Cake that I made for my bf's birthday! It is filled with strawberry fruit sponge cake, and covered with whipped cream and chocolates! I got his idea from google and it really wows me!

The Recipe is still the same for the fruit cake base, so I'm just going to put a link for you here for the cake base.

Just prepare, the sponge cake recipe, white & dark chocolate, cocoa powder, whipped cream, strawberries.

M&M "Butterless" Cookies


This is a recipe I longed to try for, easy and delicious, topped with lots of m&m! (Decide the quantities for yourself, it is like eating m&m chocolates with a combination of something else to lower down the sweetness of the chocolate bits. So here you go for this recipe, down below:

M&M Cookies
Ingredients:
1 egg
200g cake flour
80g vegetable oil
80g sugar
1 tbsp vanilla extract
m&m chocolates (as much as you want)

Steps:
1. Preheat oven to 350F. Line baking paper on baking sheet.
2. Mix all ingredients together except m&m till nicely combined.
3. Scoop dough and roll into balls. Flatten with your palm. Topped m&m onto the cookies. I like it this way so that all m&m can be viewed clearly instead of embedded inside the cookies. (It is a personal preference, any type of mixing is fine.)
4. Bake for 18-20 minutes till golden brown. Cool on wire rack and serve!




* I am not using butter here, because I do not have butter at home, plus my bf does not really like butter, so a cookie made out of butterless recipe, he is a fan of that! So, here you go! Also, butter is getting more expensive and I think that oil is more affordable, and the results are almost the same!

Crunchy Melty Baby Biscuit


Ooooo... what's that? It is very crunchy and melt-to-your-mouth small biscuits made out of corn starch. It reminds me of a biscuits I loved that could only be bought back home! Forgot the name of the biscuits, so I shall just name it on my own!

Crunchy Melty Baby Biscuit
Ingredient:
1 egg yolk
30g sugar
80g corn starch
3-4 tsp soy milk

Steps:
1. Preheat oven to 320F. Line baking paper on baking sheet.
2. Mix everything together till combine to a dough.
3. Bake for 12-15 minutes.
4. Let cool and serve!


Chocolate Nutella Macaroon *Failed*


This is a "kind-of-failed" macaroon, only 1-2 success macaroons which had been eaten by me, unfortunately, before I could take this picture! Arghh..@@. It should not have cracks on the top, which means too many air bubbles formed, which also means "kind-of-failed" as I have said earlier. But, the texture and taste is yummy! Anyway, I will still give you the recipe since it is a good one!

Chocolate Nutella Macaroon:
Ingredients:
1 egg white, large
2/3 cup powdered sugar
1/3 cup almond flour
1/4 tsp salt
1/4 tsp cream of tartar
2 tbsp cocoa powder

Nutella, for filling

Steps:
1. Preheat oven to 350F. Line parchment paper on baking sheet.
2. Beat egg white and cream of tartar till peaks formed.
3. Fold in sifted sugar, flour, salt and cocoa powder gently. Put into a piping bag to make desired shape.
4. Set aside for about 30 minutes, and bake for 12-14 minutes. Let cool on wire rack, and serve!


Besides the cracks, and "not so successful attempt", the taste is great! It is just like macaroons with cracks.Haha

Fruit Cake Revisited!





Who does not love a light, and spongy fruit cake? I do! Love love love! I have done in a previous post, so I would just link the page for you to follow the recipe. This time I added kiwi into the fruit cake, and turns out to be as soft as usual. Do try out someday!

*FYI, I made a thicker cream haha, which results into more yummy cake! I just think that whipped cream goes great with fruit cake with spongy and fluffy texture!

Milo Chiffon Cupcakes


Milo Chiffon Cupcake! I called it a chiffon cupcake because I never expect it to be so fluffy and moist. I thought it would be more of a dense cupcake. However, very happy with the results. So here is the recipe:

Milo Chiffon Cupcakes
Ingredients:
100g butter
80g sugar
2 eggs
100g water
150g cake flour
110g milo powder
2 tbsp baking powder

Steps:
1. Preheat oven to 350F.
2. Beat the butter and sugar till fluffy. Add in eggs one at a time till fully incorporated.
3. Stir in dry mixture and water alternately till mix.
4. Bake in oven for 20-25 minutes. Cool on wire rack.



I decorate one of the cupcake with icing sugar and chocolate sprinkles, just for cuteness! >.<

Chocolate Bitter Truffles


WHAT IS THIS??? Chocolate Bitter Truffles!!! Yummy-LICIOUS!!!!!

Haha... Cannot stop laughing because I made it, at last! And it tastes like heaven! Love it so much! The texture came out just nice, and I cannot believe I really made it. Don't mind my over-reaction of happiness! >.< I am going to make it again and again because I think there will be someone eating them, if it is not me. =P

Moist Honey Lemon Muffins


When searching for something to do at home, I saw 1 lemon left in my fridge, so honey lemon muffin it is. Honey + Lemon = The best refreshing combination!

Moist Honey Lemon Muffins
Ingredients:
50g butter, softened
25g sugar
1 egg
2 tbsp honey
50g cake flour
1/2 tsp baking powder
30g chopped lemon (soaked inside honey for 30 minutes)

Steps:
1. Preheat oven to 350F. Line cupcake liners into cupcake pans.
2. Beat butter and sugar till mix. Add in egg till well-incorporated.
3. Add in honey and dry mixture. Then, add in chopped lemon.
4. Pour batter till 80% full, and bake for 20-25 minutes or toothpicks inserted come out clean.
5. Cool on wire rack completely.
